Thank you for such a great post! In a few days we will be leaving for a small coastal town south of Puerto Vallarta, but not before preparing a batch of "tamales de pavo leftovers", which we plan to freeze and enjoy after returning just in time for Christmas. While in Mexico, we will also visit Monterrey, where we hope to feast on the thin tamales typical of the region, with a side of the now worldwide famous "Chicharrones de la Ramos".
