I have read varying finish temperatures for sourdough bread... do these temperatures change for altitude?.. water boils here at 203 I have been using this simplifying method 2 times but I don't get a doubling in 11 or even 13 hours so I have just left it out overnight an still not doubling.
Do you use tap water or distilled? I have been using about 130 g red whole wheat and 420g white bread flour and its great. .
