Hi Kathy, I'm so sorry we weren't able to answer your question in a timelier fashion! If ever you're in need of more immediate assistance, please don't hesitate to contact our Baker's Hotline. Unfortunately, I don't think the rolls will last quite so long in the fridge, especially in the shaped form. You might have the best luck refrigerating the dough in bulk form, perhaps after a somewhat abbreviated rise at room temperature. When done this way I think the dough could last in the refrigerator for 2-3 days. For best results, I would postpone shaping the rolls until either the day you want to bake them, or the night before (and then return them to the fridge). Be sure to allow plenty of time for the rolls to rise at room temperature if they haven't risen much in the refrigerator overnight. As far as getting even sized rolls, the easiest way is to weigh the pieces, but if you don't have a scale, check out this video about how to divide and shape rolls.
