This is so helpful. I have seen discussions about fermenting shaped loaves in the refrigerator but it was never very clear to me how all of the steps fit together. This does it. One question however. After the shaped loaves come out of the fridge do they need to warm up to room temp before before going into the oven or do they go in directly. I love to hear what Matin suggests. I've seen directions both ways.
