Hi Jerome, sourdough baking doesn't have to be a huge time commitment! You could purchase a mature starter from us to avoid the creation process, and while the starter does benefit from regular feedings (twice a day when stored at room temperature, and about once a week when stored in the refrigerator), it will also wait patiently in the refrigerator if you don't have time to feed it for a few weeks.
