Have created a starter from scratch a few times with success but recently encountered an issue where the starter has patches of white growth that seem throughout the starter, not just on the surface. Not the same as the bubbly rise an active starter has; more like a separate mold but doesn’t look specifically like a mold (white, no green, red, or black color). I’ve compared to some on-line photos that suggest it is unincorporated flour but I’m concerned it is not. Although the starter wasn’t funky-smelling, I tossed and restarted it a couple of times. I typically feed 1:1 but leave more of the existing starter when I need a greater quantity of starter for a recipe. Any suggestion as to what I’m encountering?
