About eight years ago I moved from Maine to Georgia. I intended to carry my starter in its King Arthur stoneware crock, but in the chaos of moving day the movers packed it with the rest of my kitchen and it went into storage for about three months until I found a new home. When I unpacked it, I started to throw the old starter down the drain and suddenly decide to feed it. In two or three days it was bubbling away and I continued to use it successfully for years. I wouldn't worry about a two week wait in the refrigerator.
