Hi, Tom! As explained in this article, 100% whole grain breads tend to be on the denser side, which is why you'll typically find them made as more sandwich-type loaves than artisan ones. Both the volkornbrot and the Icelandic rye bread listed above are made entirely with whole grains, but rye instead of wheat. For a 100% whole wheat bread, you'll be looking at loaves like Classic 100% Whole Wheat Bread or Whole Wheat Sourdough Bread. Happy baking!
