Hi Terence, these are all good points. It takes time for the wild yeast in the flour and the friendly bacteria to start working together. This may take 3-4 days or up to two weeks. Once the activity level is achieved, then a schedule of maintenance is followed to keep the sourdough starter fed and to increase the amount of sourdough starter when you want to bake with it.
