This was a great post - I'm pretty new with sourdough bread baking. Many of the books/websites out there have been intimidating to me with sooo many steps and it can confusing. Your blog and keeping it simple (more or less) is perfect for me. I also, made the "no knead sourdough bread" - K.A. recipe and it came out perfect. I do have trouble cutting the dough and I have the same lame shown above. It should be sharp, but doesn't seem like it. I was afraid to make sharper cuts because I didn't want the dough to deflate. Any thoughts? Also, should I mist the oven with water? Is it ok to ask more questions - I didn't want to ask too many at this time. Thank you sooo much!
