We're glad to hear that you enjoy making marshmallows at home, Jennifer — they're such a delightful treat! The reason the marshmallows aren't roasting likely has to do with the amount of corn syrup, commercial marshmallows typically have a higher amount of corn syrup which likely helps them keep their shape and roast rather than just melt. We hope this helps and happy marshmallow making!
