Great great recipes ideas.
But many I add a pro tip for baker in humid places or climates :
add some sifted potato starch in you marshmallow while whipping (3 table spoons) and for dusting you can use a mix of potato (or tapioca starch) and confectioners sugar.
And I dust my parchment paper with this mix.
