Mom baked all our bread. The cut in the middle idea is a revelation! Hubby loves homemade bread but not “heels”. Our old oven with a real flame pilot light was where we tossed the heels into the bottom in the broiler pan, then we kids had fun making bread crumbs with the meat grinder when we had enough dried crusts. (Had to check before baking, after *someone* forgot to take the heels out before preheating!) NOTHING went to waste in Mom’s kitchen! When I got married, I discovered an amazing variety of products you could just BUY instead of making at home…but I got the last laugh in COVID lockdown because I knew just how much you can make from scratch at home!
