Thanks for the tip about slicing down the center of the loaf instead of the end. I can't believe I hadn't thought of that.

As for storage, I had read a tip about keep the unused bread item in it's bag in an unused dutch ovens with the lid on. And I have been doing that for years. It works great! It usually gives me an extra day or more before I have to think about spoilage or freezing.
