Wow, these loaves look amazing. I definitely want to give them a try. I just have one question though. If I have a starter that when fed (I know I don't need to feed this as it is unfed) only doubles in size, and I let the dough double during bulk. Would it still be able to rise during proofing and then get some oven spring as well? What I mean to say, would it be over fermented.
