I use this recipe all the time but not to eat crumpets since I hardly know what those are. Instead I put them on the frying pan and add sweetened red beans (from Asian grocery stores) or jam as filling. Add a lot of oil for a nice crispy exterior. Really easy and such a quick way to use up sourdough discard.
