Hi, Sarah! That would depend on the temperature of your proof setting. If it's 80°F or below, feel free to use it! Otherwise, you may have better luck proofing your dough in the oven with just the light bulb on for warmth, or in another warm place in your home: Where to put dough to rise. If you've got a baking stone, do feel free to use it! Just make sure that it has time to heat through before you bake. (This will take a bit longer than it does for your oven to preheat.)
