Hi, I was checking out this blog post because it seems similar to a Potato Flake Starter, although it's not exactly the same. I think it would be interesting if you all could experiment with and blog about baking with a potato flake starter, so I could get an expert perspective. There are not many blogs out there yet. I love the soft, sweet bread it results in, and it makes the best cinnamon rolls, but in full transparency I lost my original starter (given to me by a friend) during a move, and have struggled to get a good rise out of my new one. The flavor and crust come out perfect, but overall it's been a little dense and I'm not sure how to correct it.
