Hi Catherine! You sure can bake any kind of bread you'd like in a pain de mie pan, you just want to make sure it's an appropriate amount of dough for the pan. A 9" pain de mie pan holds a recipe with 3 to 4 cups of flour in it and a 13" pain de mie fits recipes that have 5 to 6 cups of flour. You certainly can experiment with creating a pain de mie-like pan using a regular loaf pan — we'd recommend either covering your loaf pan tightly with foil or placing a half or quarter sheet pan on top of the loaf pan to act as a lid.
