Thank you for this article! I have this pan but I've only used it to make pain de mie, with the lid. I feel silly saying this, but I've never even thought about using it without the lids or for loaf cakes and quick breads. The tall square quick bread looks so much more appealing than the squat rectangle shape. I'm going to try that this weekend.
