Hi Kay! Our special patent flour is the same as our bread flour in the 5 pound bags, so the special patent wouldn't be a great candidate for more tender items like pastry crusts and cakes. If you are looking for the 50 pound bag equivalent of all purpose flour, it is called Sir Galahad. Happy baking!
