Great article. But, could you tell us what the protein % is for the "King Arthur '00' Pizza Flour"? The local decades-old pizza shop uses a high glutton flour for their dough. Would the '00' Pizza Flour fit the bill? It's what I've been using but I'm always looking for ways to improve my homemade pizza.
