Hi Delores! It'll likely depend on the kind of cake it is. Egg-leavened cakes like angel food cake or genoise will rise better in a pan with ungreased sides so the cake can cling and climb up the sides of the pan. The same thing goes for gluten-free cakes, they need to hold onto the sides. Non-egg-leavened cakes are usually fine in a pan that's been thoroughly greased. Annabelle@KAF
