somewhere in this blog you demonstrate how unnecessary it is to bloom yeast. Yes, how is it Alton Brown does not know this? I've been making grandma pizza for decades and simply put some tap water without heating it in the bowl, sprinkle in some ADY then my dry ingredients, mix and the dough works fine. Pizza making is so simple. I do agree with Alton Brown in bemoaning what most chains have done to pizza.
