Most aged cheeses are lactose free. All Cabot cheeses are lactose free, because they've been aged for about 2 years. Check the sugar content. Since lactose is a milk sugar, if there is no sugar in the cheese you are using, your wife should be fine. But there are other things in various dairy that can affect you as well, like the milk proteins. I would suggest a nibble before throwing the cheese on the pizza. As others mentioned, there are good non dairy alternatives. Lisanatti makes a mozzarella shred with almond milk that melts very well.
