I highly recommend maple butter -- heat butter and maple syrup for a few minutes until they're melted together. It's greater than the sum of its parts. You can save leftovers in the fridge; they will become a creamy spread when chilled. You can also make this by beating softened butter and maple syrup, but for pancake purposes melted is fine.
