I love pancakes and these posts are inspiring (love the photos). The problem I have is that a batch is far too much for us - just two of us and we only eat a cake or two each at a meal. I see that this recipe calls for a rest in the fridge. Would the batter still be good if I used the batter one day and stored the rest in the fridge for the next day?
