We find metal is best because it conducts heat the most evenly, but you're certainly welcome to try baking your bread in a glass loaf pan if you'd like. If you bake in a glass pan, we'd recommend lowering the oven temperature by 25°F so the exterior of the loaf doesn't over-brown. The internal temperature for a fully baked sandwich bread should be 190°F. We recommend using the internal temperature along with other tests for doneness, like smell and appearance, as thermometers can be off sometimes. We hope this helps and happy baking!
