If you'd like it to rise more quickly, a one-for-one substitution of the SAF Gold would definitely work! If you're wanting to time this for a slow and cool rise, you'll want to stick to regular yeast so that you don't accidentally over-proof your dough. Happy baking! Kat@KAF
