Thank you very much for such an informative article. I have not tried to make sweet breads yet but it so good to find such articles to see what factors are involved in the making and how to deal with them because sometimes I will decide to try a recipe on a whim, and being inexperienced in bread making, will find myself over my head. It's much better to be prepared.
