Hi Patty, we've done a number of different tests to figure out the best way to make cinnamon rolls in advance. While rolls can often be stashed in the fridge overnight to complete their final rise, this doesn't work as well with cinnamon buns. The cinnamon-sugar filling tends to liquefy and melts out of the swirl, leaving you with a mess in the bottom of the pan and not much sweetness in the actual rolls. Instead, we've come up with a freeze and bake method that works like a charm. Using this approach outlined in this article on our blog, you can make your cinnamon rolls in advance (up to a month ahead) and then have warm, homemade cinnamon rolls ready to serve in 20 minutes.
