We understand, Val. As a starting place, we recommend substituting the Super 10 blend with 3 3/4 cups (15 ounces, 425g)) of white whole wheat plus 1/2 cup (2 to 3 ounces, 57g to 85g) of whole grains and seeds. You could certainly incorporate some of the individual flours and grains that make up the blend into this substitution, and our ancient grains guide offers some valuable insight into baking with many of them.
