Hi there, Ed! Using additional vanilla will help impart more flavor but it won't change the mouthfeel of a shortening-based frosting. If you're using gel food coloring you shouldn't need to change the ratio of sugar to fat, but if you're using a liquid frosting, you may want to hold back some liquid.
