I had the same question, but for the Back of the Bag Oatmeal Bread--which is 78% hydration (excluding the weight of the oatmeal and butter). But the reply isn't clear. Which do you suggest for recipes that are above 75% hydration: a) keep hydration the same, i.e., don't add liquid; or b) increase the hydration (and by how much)?
Also, for the Back of the Bag Oatmeal Bread recipe, should I include the weight of the oatmeal? That would decrease the hydration level, and if I use the tangzhong method, then I would add milk enough to increase hydration to 75-78%, correct?
