hi i want to clarify, in your example you mentioned to increase the hydration to 75% and need additional 44g of milk. does that mean to take out 44g from the original recipe or use 44g out of the recipe? for the flour if we take use 5% for the tangzhong, we reduce 5% in the original recipe. is that correct?
new to this method and i am trying to convert a recipe to tangzhong. thanks so much!
