I'm a little confused at the example given using 1 cup / 227 g of milk and 3 cups/361 g flour. You calculate milk at 87% hydration, so wouldn't you multiply 227 by 87%? That would give you 197 g rather than 227. That would mean you would need to add an additional 74 grams of moisture not 44. I'm not sure where I got off track.
