I'm interested in incorporating tangzhong into a recipe that already has a hydration level in excess of 75% (it's the KA Six-Grain Bread which is 80% hydration, not counting the oil). What suggestions do you have for recipes that exceed 75%? Hydrate even more? Leave as is?
