Hi! thanks for the tips and tricks! i love working with math and ratios in baking so this helped alot!
Just wanted to clarify, is it right to say that the adjustments are as follows:
- use my current bread recipe (base recipe) and increase hydration from whatever level it is at to 75%
- take note of the additional water needed to add to this base recipe
- make tang zhong
- final revised recipe= base recipe + liquid + tang zhong?
