Sue, the bottom of each layer (the part that was in the bottom of the pan) will always be the flattest/most level. I like to put the two flat sides together (in other words, the two bottoms) for greatest stability. But I know others prefer to have a perfectly flat top. So up to you, really — PJH@KAF
