The first time I made these, I was a little dismayed at how few pies I got and how messy they were to eat while walking around. Since the plan was to make mass quantities of these for picnics, camping trips, and other stand-up eating events, I started thinking (always dangerous). I reduced the size of the squares a little, cut down on the amount of filling on each square and, rather than topping each square with another one, I folded over each corner to the middle and glued them together with some egg wash. Voila! Lots more hand pies, with each one one to two bites, and very little filling loss while eating. Yes, the corners can separate during baking, but then they just become mini-tarts. ;-)
