One of my favorite cakes is our Olive Oil Bundt Cake recipe because of its unique, floral flavor and rich crumb. I haven't experimented with using olive oil as a substitute for butter in many recipes, but it can definitely be used 1:1 in place of vegetable oil (assuming you're ready to welcome a more assertive flavor).
