Hi Sue! While it depends on how much frosting you use on each cupcake, 1 cup of frosting is generally enough to moderately frost 12 cupcakes. Scaling that up to 40, you should be fine to make this 7.5 cup recipe for your shower. This will freeze quite well so don't discard any leftover!
