Hi Joseph, I added 1/4 cup vital wheat flour to a whole wheat bread I was testing out. It was a traditional loaf, 2 tb molasses for sweetness and it was really tender. I froze it to see how it would hold and it was tender and moist - I was half expecting the vital wheat to make it heavier but it was so light. Great minds!
