Thanks for your kind words, Christine. Neat that you're an experienced tangzhong baker! I've just been getting into it over the past year or so, and am excited to try more. While I love all kinds of bread, I just find that those soft loaves and rolls from my chiildhood hold a special place in my heart; they're my comfort breads. So it's nice to be able to extend their shelf life. Even so I usually end up slicing and freezing half the loaf (in smaller packets), so that I have a piece available for toast whenever the urge strikes. Between tangzhong and the freezer and the toaster, a "comfort bread moment" is always just a minute away! PJH@KAF
