Hello! I had been given a mature starter from a friend and my first loaves were great. I kept it in the fridge afterwards for about 3 months, feeding about every 2-3 weeks (my friend said it was hearty and would often only feed 1x a month). Just went to make my next batch of bread and the starter hardly rose at all resulting in dense, flat bread. I have been feeding it 2x a day for 4 days now and still no activity. My friend said she fed it AP flour and I've been feeding it bread flour, is that the reason this is happening? Can I switch back to AP at this point?
