Hi Teri, it's a little tricky because most cookie recipes don't call for much or any liquid and you really wouldn't want to replace the eggs or butter with discard. I know a baker in our bakery here in Vermont who has experimented with using dried discard in cookie recipes, so if you dried your starter discard and ground it into a powder, I think you could substitute this for a small portion of the flour.
