I know this is years old, but, yes, your potato flake starter needs air holes. (Unlike my flour starter, which seems to be happy sealed in a tupperware container). I have great luck reviving a neglected/slow potato flake starter by leaving it out on the counter and discarding/feeding, and then continuing to leave it out until it eventually starts to bubble. Then I'll discard/feed it a couple more times before baking. Mine has a slightly sweet aroma when it's happy! If the kitchen is cold, I'll set it over the dishwasher while it's running.
