 Hi Rico, that's great to hear! Now that your starter is mature and rising well, you might want to consider tweaking the ratio of ingredients to allow you to replenish the starter when it's at its peak of rising, or just beginning to fall. I'm only saying this because you mentioned that your starter is doubling after 6 hours, and it doesn't really benefit the starter to allow it to collapse significantly before feeding it again. In fact, feeding when the starter has fallen significantly can lead to more sluggish yeast behavior. Since you probably don't want to start feeding your starter three times a day, increasing the feedings a bit may help slow down fermentation and allow you to catch the peak more within that 12 hour time frame. While your starter is obviously mature, it won't hurt to try a 1:2:2 or a 1:3:3 ratio if it helps you line up your twice a day feedings closer to the time when your starter reaches its peak. I think this time around your starter will still double nicely, if a little more slowly. Happy baking!
