I did what you recommended and now have two starters. :) I fed my fridge discard/starter last week when I made waffles (which turned out amazing) from the discard and just fed it again today. Both times it doubled as it should have and I put it back in the fridge. My discard/starter was from when I was feeding it KA wheat flour but is doing great with white flour feedings now (AP until I ran out and the last feeding was KA bread flour). The one I was still struggling with, I used your small starter recipe to cut it down and had no issues with it doubling, and that is now also in the fridge. I am back to work tonight, but plan on making bread on one of my next days off. I did also want to mention that mine did so much better once I put a lid on them. I misunderstood the lightly cover and had been putting a towel on top, which was getting me a thick crust on top that was barely bubbling. Thank you, again, for all of your help. You saved all of my starters. :)
