Hi, would appreciate some feedback on our starter please. We began our starter 8 days ago, we feed once per day - 50g flour & 50g water, the second day we added a further 50g flour & 50g water. The third day we discarded 100g and fed 100g flour & 100g water. At this point it was going well and doubling in size but we ran out of space in our jar. We changed to a large jar (which is all we had) and from then it started to be too watery. I don't think we were removing very much and therefore not feeding it enough. The following couple of days, based on info from elsewhere we decided to thicken it based on the ratios - so less water and more flour, but we never got our rise back. We suddenly had loads of mixture so we removed lots and reduced it to 200g. We added in 200g flour and 200g water. We've continued to remove a lot of mixture so we start with 200g starter and add 200g flour & 200g water for a couple of days but although it bubbles it doesn't rise. At first it had a very sick smell to it but now its more acidic I think. Its consistency is slightly thicker than before as its more like thick pancake mix but doesn't ever float in water. Should we continue with this starter or start again? We don't know how to make it work! Thank you for any help you can give :)
